5-Minute Mortadella Breakfast Sandwich

A fast, diner-style breakfast sandwich with a fluffy microwave mayo omelet, crisp-edged mortadella, melty American cheese, and a bun toasted in the pan drippings. It is rich, savory, and genuinely doable on a busy morning.

Method

  1. Crack the eggs into a bowl. Add the mayonnaise and a pinch of salt, then whisk until smooth and homogeneous.

  2. Lightly grease a microwave-safe bowl, pour in the egg mixture, and microwave for 45–60 seconds, until just set into a fluffy omelet round.

    ¼ tsp Cooking oil

  3. At the same time, place the mortadella slices in a nonstick pan over medium-high heat. Sear for 1 minute.

  4. Flip the mortadella, top it with the American cheese, and sear for another minute, until the cheese melts and the mortadella is lightly browned.

  5. Toast the split bun cut-side down in the mortadella fat for 30–45 seconds, until warm and lightly browned.

  6. Assemble the sandwich with the toasted bun, seared mortadella and cheese, and microwave omelet. Close the sandwich and serve immediately.
