Blueberry Cobbler With Lemon Sugar Berries

A simple, buttery blueberry cobbler with juicy lemon-scented berries baked over a tender, golden batter. Serve it warm with a scoop of vanilla ice cream when blueberries are at their peak.

Method

  1. Preheat the oven to 350°F. Place the butter in an 8-inch baking dish or similar small baking pan and put it in the oven until melted and bubbling.

    8 tbsp Butter

  2. Toss the blueberries with the lemon zest and part of the sugar until evenly coated.

    6 cups Blueberries1 tsp Lemon zest4 tbsp Sugar

  3. In a bowl, whisk together the flour, baking powder, salt, and most of the remaining sugar. Stir in the milk to make a smooth batter.

  4. Pour the batter directly into the hot melted butter in the baking pan; do not stir.

  5. Spoon the sugared blueberries over the batter, then sprinkle with the remaining sugar.

  6. Bake until the cobbler is puffed, golden, and bubbling around the edges, about 35 to 40 minutes.

  7. Let cool slightly, then serve warm, ideally with a big scoop of ice cream.
